Tickets are on sale now for Chef Pernot’s cooking class taking place on Saturday, Sept. 28 from 2-6 p.m. at Milk Street Cooking School in Boston! Chef Pernot's class will feature recipes directly from his newest cookbook, ”Cuba Cooks: Recipes and Secrets from Cuban Paladares and Their Chefs.” During Chef Pernot’s extensive travel to Cuba over the last 10 years, he’s gotten to know many native chefs who run privately-owned paladares all over the country. Each recipe in Cuba Cooks was created with or inspired by those chefs who continue to persevere in the Cuban culinary field because of their undeniable passion for the art and love of the cuisine.
Class attendees will learn how to recreate several recipes featured in Cuba Cooks, along with the stories behind them. Chef Pernot’s specialty dish is ceviche, and workshop students will get a bonus demo on how to properly cut a whole fish into fillets. Class attendees can also look forward to creating the following recipes with Chef Pernot:
Frituras de Malanga con Ketchup de Tamarindo (Taro Fritters with Tamarind Ketchup)
Ceviche de Pez Perro (Hogfish Ceviche)
Cherna Incrustada en Malanga con Salsa de Naranja Agria y Espinaca Salteadas (Taro-Crusted Grouper with Sour Orange Sauce and Sautéed Spinach)
El Arroz con Leche de Mami Totty (Mami Totty’s Rice Pudding)
