In honor of National Ceviche Day on Thursday, June 28th, Cuba Libre Restaurant & Rum Bar will offer a special Ceviche Mixto from Monday, June 25th until Sunday, July 1st.  Chef-Partner Guillermo Pernot's Ceviche Mixto is composed of poached lobster tail, shrimp and squid with fresh coconut water, chiles, citrus, Thai basil and cucumber salsa, and topped with crunchy coconut chips.
